Healthy-ish Banana Yogurt Muffins

One of my favorite quarantine activities continues to be baking. With this recipe, I pretend to be healthy with oats & yogurt muffins. But then added in chocolate chips, toffee bits & a sugar crumb topping…because why not? Enjoy with coffee or a small scoop of vanilla ice cream.

-Beat 3 overly ripe bananas with 2 eggs
-Add in 1 cup greek yogurt, 1/4 cup brown sugar & 1/2 t vanilla
-Next, add 2 cups oats, 1/2 tsp baking soda & 1.5 tsp baking powder
-Stir in chocolate chips & toffee chips
-Fill cupcake tins & top with sugar crumbs (1 T butter & 1/2 cup sugar)
-Bake at 400 degrees for 15 minutes
-Enjoy!
